We are desperately waiting for the end-summer rains to re freshen the vines and olive trees after the summer draught. The canopy management therefore is very important now in order to have the grape bunches hanging free for drying naturally with the wind.

Around the 14th of September we will have a good shower and this will balance acidity and sugar levels of the fruit on the vines. We only have to pray we do not get any hail storms…
